Ingredients:

12 oz pasta of choice (fettuccine, linguine, or penne work great!)

2 tbsp olive oil

4 cloves garlic, minced

1 cup unsweetened plant-based milk (oat, almond, or soy)

½ cup vegetable broth

½ cup raw cashews (soaked for 10 minutes and drained)

¼ cup nutritional yeast

1 tbsp lemon juice

½ tsp salt

½ tsp black pepper

1 tsp garlic powder

1 tsp onion powder

1 cup Armored Fresh grated parmesan cheese

(Optional) Fresh parsley and red pepper flakes for garnish
Instructions:

Cook pasta according to package instructions. Reserve ½ cup of pasta water before draining.

In a blender, combine soaked cashews, plant-based milk, vegetable broth, nutritional yeast, lemon juice, salt, pepper, garlic powder, and onion powder. Blend until smooth and creamy.

Heat olive oil in a large pan over medium heat. Add minced garlic and sauté until fragrant (about 1 minute).
