This isn’t your average pasta dish. With a velvety, dairy-free cream sauce and the rich, savory flavor of Armored Fresh plant-based parmesan, this recipe delivers indulgence without compromise. It’s smooth, comforting, and packed with umami goodness in every bite. Whether you’re looking for a quick weeknight meal or a decadent dish to impress, this creamy vegan pasta has got you covered.

 

Ingredients:

  • 12 oz pasta of choice (fettuccine, linguine, or penne work great!)

  • 2 tbsp olive oil

  • 4 cloves garlic, minced

  • 1 cup unsweetened plant-based milk (oat, almond, or soy)

  • ½ cup vegetable broth

  • ½ cup raw cashews (soaked for 10 minutes and drained)

  • ¼ cup nutritional yeast

  • 1 tbsp lemon juice

  • ½ tsp salt

  • ½ tsp black pepper

  • 1 tsp garlic powder

  • 1 tsp onion powder

  • 1 cup Armored Fresh grated parmesan cheese

  • (Optional) Fresh parsley and red pepper flakes for garnish

Instructions:

  1. Cook pasta according to package instructions. Reserve ½ cup of pasta water before draining.

  2. In a blender, combine soaked cashews, plant-based milk, vegetable broth, nutritional yeast, lemon juice, salt, pepper, garlic powder, and onion powder. Blend until smooth and creamy.

  3. Heat olive oil in a large pan over medium heat. Add minced garlic and sauté until fragrant (about 1 minute).

  4. Pour in the blended sauce and cook for 2-3 minutes, stirring frequently until heated through.

  5. Add the cooked pasta and Armored Fresh grated parmesan, tossing to coat. If needed, add reserved pasta water gradually to reach desired creaminess.

  6. Serve immediately, garnished with fresh parsley and red pepper flakes if desired. Enjoy!
